Cafe Opens In Fairfield, With A Focus On Plant-Based Food
Green & Tonic opened about a month ago in Fairfield. The eatery prioritizes gluten-free, vegan and organic options.

FAIRFIELD, CT — A new eatery in Fairfield is prioritizing food and drinks that are healthy as well as tasty.
Green & Tonic opened about a month ago on the ground floor of the Trademark Fairfield Apartments at 665 Commerce Drive, in the storefront formerly occupied by coffee shop Rise & Grind, according to Community and Economic Development Director Mark Barnhart.
“That area is fast growing and we’re creating a bit of a neighborhood,” Barnhart said.

Getting in on the action is Green & Tonic, a plant-based cafe that prioritizes gluten-free, vegan and organic options.
“Green & Tonic is rooted in plant-based superfood ingredients, and we are thrilled to be able to answer the call for how people are eating today,” Gabriel Sorgi, president of Green & Tonic, said in a news release. “But, at the end of day, it’s the ability to provide this type of food in a creative, delicious, and accessible manner that fuels our stores and our customers.”

Signature menu items include acai bowls, superfood smoothies, soups, salads, wraps, and from-scratch, gluten-free bakery items that are lower in fat, sugar and calories than traditional baked goods.
Over the summer, the business introduced its Supr Pops frozen fruit popsicles. Another standout offering is the Supr Brew bottled coffee and tea beverages.
“They clearly know what they’re doing,” Barnhart said. “We’re excited to have them in Fairfield.”
The Fairfield location is part of a wider 2021 expansion for Green & Tonic, which opened its first eatery nearly a decade ago in Darien. A second location followed in Cos Cob a few years later, then a third in Westport the year after that. In addition to the Fairfield storefront, Green & Tonic this year has also established a cafe in Rye, New York, and a New Canaan eatery is set to open this month.
