Isla & Co. Opens First Connecticut Location In Fairfield

FAIRFIELD, CT — Isla & Co., a new restaurant in downtown Fairfield, chose Fairfield for its first Connecticut location because of the local charm.

"We really liked the sense of community in Fairfield," co-owner Barry Dry told Patch. Tom Rowse is the other co-owner, and Matt Foley is the executive chef. "There's a good balance of city and suburbia. It's a beautiful town."

The Fairfield spot is one of three restaurants in the growing portfolio of Isla & Co. locations, the others being Williamsburg and Manhattan in New York. This week, Fairfield officials joined the owners for a ribbon-cutting ceremony to welcome Isla & Co. to town.

"We're excited you chose Fairfield," said First Selectwoman Brenda Kupchick. "We're here to support you."

Plans are underway to open more Isla & Co. locations in Florida; Atlanta, Georgia; and Dallas, Texas.

Isla & Co. is open for brunch and dinner, offering American favorites with a twist, according to the description on its website:
