PopUp Bagels Opens Permanent Location In Greenwich

The popular bagel company with pop-up locations in the tri-state area recently opened a permanent spot in town.

GREENWICH, CT — Glenville residents might notice the sweet and intoxicating smell of freshly baked bagels filling the air with the addition of PopUp Bagels at 12 Riversville Road.

The kitchen and pick-up window soft-opened with lines down the block on April 7. Glenville marks the third permanent location in Connecticut for PopUp Bagels, where all bagels are boiled, seeded and baked on-site, and served along with an ever-changing variety of cream cheese, or "schmears," and artisan smoked fishes. There are also locations in Westport and Redding.

But this is not your typical bagel shop. Bagels must be ordered online in advance by the dozen only in order to guarantee hot-out-of-the-oven freshness. Customers choose a pick-up time, typically between 7:30 a.m. and 11 a.m., Thursday through Sunday. Additional mid-week dates are expected to be offered in the future.

The menu is simple with just five bagel varieties: plain, salt, poppy, sesame and everything. Plain and scallion or vegetable cream cheese spreads are offered each week, along with a different, creative "schmear" and butter.

"We're super excited," said PopUp Bagels founder Adam Goldberg on opening up a permanent location in Greenwich. "It's been our target for a year, and we were fortunate to stumble upon this space a few months ago. It's been a pleasure to see it built out. We're thrilled about it."

The business began in 2020 as a backyard pickup window bagel service to share a newly-created bagel recipe with friends. Today, bagels are selling out in multiple permanent and pop-up locations every week in Connecticut, New Jersey, New York and Massachusetts.

Goldberg said scores of Greenwich residents have followed PopUp Bagels to various pop-up locations over the past two years, so opening a brick and mortar location in Glenville made sense.

In the past, Goldberg has collaborated with Rosina's in Greenwich, and had a drop-off location at Fjord Fisheries on Sundays.

PopUp Bagels also recently closed a second round of seed funding allowing for expansion. The latest funding round was led by Hollywood producer and food entrepreneur John Davis, who has backed several notable food companies: Wetzel’s Pretzels, Dave’s Hot Chicken and Blaze Pizza.

Goldberg's bagels won "People’s Choice Best Bagel" at both the 2021 and 2022 Brooklyn Bagel Festival. A unique recipe creates a freshly-baked crust on the outside of the bagel, and a warm, soft, chewy inside.

"Our bagels are a little bit smaller than the typical bagel store bagel, and they're always baked fresh for you. You're getting a great product," Goldberg said. "When you come and grab them from us, they're just within 30 minutes out of the oven every time."

The reaction in Glenville so far has been "amazing," said Goldberg, who uses the tagline "Not Famous, But Known."

Glenville residents certainly know about PopUp Bagels now.

"People are so excited to see us there and smell us there," Goldberg said. "All the residents of Glenville come over on Saturday morning and tell us, 'It smells amazing today!'"

Goldberg has collaborated with and shared his bagels with big name restaurateurs such as Danny Meyer and Chef Jean-Georges Vongerichten.

A storefront is scheduled to open on Thompson Street in Manhattan in the coming weeks, and baseball fans can find PopUp Bagels pizza bagels at New York Mets games and Citi Field this season.
