Breakfast Waffles and Omelettes

Start the kids off right tomorrow

They say breakfast is the most important meal of the day. Our students at My City Kitchen love to make breakfast – as they say, "it's an EGG-CELLENT idea." As a parent you want to give your child everything they need to be successful. Let's start them off right.   

Benefits for children
Breakfast is especially important for children and adolescents. According to the American Dietetic Association, children who eat a healthy breakfast are more likely to:

  • Concentrate better
  • Have better problem-solving skills
  • Have better hand-eye coordination
  • Be more alert
  • Be more creative
  • Miss fewer days of school
  • Be more physically active

Waffles

Ingredients:

1 cup flour

1 teaspoon baking powder

1/4 teaspoon salt

2 large eggs, separated

1 tablespoon sugar

1/4 teaspoon vanilla extract

2 tablespoons unsalted butter, melted

1 cup milk

non-stick cooking spray

Directions:

Preheat the waffle iron according to the manufacturer's instructions. In one medium bowl sift together flour, baking powder, and salt. Set aside. In a second bowl use the wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In a third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using the rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix! Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. Serve immediately with honey.

 

Omelettes

Ingredients:

2 whole eggs

Assorted veggies: onions, peppers, broccoli, spinach etc. 

Directions:

Gather the veggies you enjoy eating. In a hot frying pan, cook veggies for 1 minute and set aside. Crack eggs in small bowl and mix. In the same frying pan, apply cooking spray, pour egg mixture into pan and cook for 2 minutes on both sides. Add the veggies and fold the eggs. Serve hot with the toasty waffles.
