My favorite summer nibble
If you don't have your own tomatoes fresh from the garden, find someone who does and then make Caprese Salad.
My garden has been teasing me.
Some of my tomato plants are taller than I am. I have picked a handful of my favorite cherry tomato, Sungold. They are orange and oh, so sweet. We've picked a couple of full-size tomatoes that got eaten promptly, either in a salad or plain. We've had a few green beans that the deer didn't get to. The same for sugar snap peas (I planted late). The zucchini seems a little slow in coming.
This is torture.
One of my very favorite things to eat during tomato season is Caprese Salad with Avocado. Simply layer thick slabs of tomatoes, slices of mozzarella, some fresh basil, top with wedges of avocado and finish with a drizzle of balsamic vinegar or a balsamic dipping oil. Of course, it's delicious without the avocado as well. If you can get different colors of tomatoes, you can create a lovely presentation.
In addition to being beautiful and delicious, Caprese Salad transports well also. You just might wait and drizzle with the balsalmic vinegar until you arrive at your destination.
