New Fresh-Squeezed Lemonade Stand Opens Inside Popular Norwalk Seafood Restaurant

The owner said the stand was created to offer the perfect companion to the restaurant's famous lobster rolls: fresh-squeezed lemonade.

NORWALK, CT — A new fresh-squeezed lemonade stand opened earlier this month at Knot Norm's, a popular East Norwalk restaurant known for its lobster rolls and other seafood specialties.

According to owner Jay LeBlanc, the idea for The Knotty Lemon stand was born from a simple idea: to create the perfect companion to Knot Norm's famous lobster rolls.

"Fresh-squeezed lemonade and New England seafood are a classic pairing, but we wanted to make it fun, nostalgic and a destination of its own," LeBlanc said in an email to Patch. "The branding has a playful personality, and the goal was to create an experience that feels like summer the moment you walk up."

Located in its own dedicated space inside the East Norwalk restaurant at 10 First Street, LeBlanc said The Knotty Lemon was designed to feel like its own little lemonade stand with a separate ordering area so guests can stop in just for a lemonade or grab one while ordering their meal.

"It creates a unique experience while still being part of the restaurant," LeBlanc said.

The stand currently offers seven varieties of handcrafted fresh-squeezed lemonade, with some unique flavors such as "The Sebby," a Sicilian-inspired lemonade featuring blood orange and Italian lemon, as well as classic, strawberry elderflower, yuzu, lavender, passion fruit and "spa water" featuring cucumber and mint.

"Everything is squeezed fresh to order," LeBlanc said. "If it's your first visit, I'd recommend starting with The Sebby because it's unique to us or The Classic if you want to experience how fresh lemonade is supposed to taste."

According to LeBlanc, the response to the stand, which officially opened at the restaurant last weekend, has exceeded his team's expectations.

"Customers have really embraced the concept, and it's been exciting to see people trying multiple flavors and sharing photos on social media," LeBlanc said. "It's exactly the kind of fun, summer experience we hoped to create."

LeBlanc said the stand is currently operating as a seasonal summer pop-up.

"We'll continue serving fresh lemonade throughout the season and will evaluate making it a recurring annual tradition based on the response," LeBlanc said.

For the Knot Norm's team, The Knotty Lemon is not just about serving up delicious lemonade for customers, but also creating memories.

"We wanted to give people another reason to stop by Knot Norm's, whether they're grabbing a lobster roll, spending the afternoon on the waterfront or simply looking for an incredibly fresh lemonade made one cup at a time," LeBlanc said. "We hope it becomes one of those summertime traditions that people look forward to every year."
