With Cinco de Mayo in the no-so-distant past, I've had a hankering for Latin-inspired dishes. And now that the warmer weather has arrived, I'm more inclined to load up on fresh veggies. This recipe satisfies both elements, with a bit of a kick that doesn't overwhelm. Plus, this dish is hearty enough to satisfy non-vegetarians, without being too heavy for the warmer months.
