
This summer, I posted a recipe entitled, Oh My Cod! Since then, I have tried to serve fish at least once a week to the whole family. Between the cod and the salmon recipe that I have posted, I haven't had to change it up at all. But this week, I wanted something different. Plus, I didn't have fresh herbs on hand and the Oh My Cod! First Edition recipe tastes best with fresh herbs. I had a hankering for Asian flavor, but didn't want to order in or eat out. Due to my food intolerances, eating out makes me nervous. I always worry that someone in the kitchen won't really understand that gluten-free is not a fad for me. That dairy-free is serious business. Let's not even get into egg and sesame. So, although I love Chinese food and Asian fusion restaurants, I would rather make my meal at home and avoid a slip-up in the kitchen and end up... well, let's not get into it. Which leads me to the newest cod recipe at Goodness Gracious Living: Oh My Cod! The Asian Edition. It is a light flavor that includes the aroma of garlic, the bite of ginger, and the sweetness of a bit of honey.
Oh My Cod! The Asian Edition
Serves 41 1/2 lbs cod loin
1/4 cup Bragg's Liquid Amino (a gluten-free replacement for soy sauce)

3 cloves garlic, minced (you can use the jarred kind if you don't have fresh)
1 1/2 teaspoons ground ginger

2 tablespoons rice vinegar
4 teaspoons honey
In a non-reactive container (glass or plastic, not metal) place all of the ingredients and stir to mix. This is your marinade. Place the fish on top of the marinade and marinate for 30 minutes, flipping once. Line a shallow baking dish with foil (or skip the foil and have one more thing to wash) and preheat the oven to 425 F degrees.
After 30 minutes, transfer the fish to the baking dish and discard the marinade. Cook until the fish is opaque and the layers begin to flake at the edges, about 10-15 minutes depending on the thickness of the cod.
Serve immediately.
On this night, I made sugar snap peas and jasmine rice. The house smelled so good and lots of yums came from around the table.
