Eating healthier is one of the most common resolutions that people make. But, it can be tough to make healthy food choices. Breakfast can be a real challenge for many people. Those who are crunched for time often skip breakfast. Some choose to eat a low-calorie cereal every day, which is not only boring, but makes you feel like you're missing something after a week of it.

A low calorie, delicious breakfast can be had in just a couple of steps. Try our delicious Portabella Mushroom omelet. It's easy, low on fat and provides the protein you need to get you through the morning.

Take some diced portabella mushrooms, green peppers and tomatoes and mix them into two beaten eggs. Pour into a heated and greased pan and make an omelet. When the eggs are done, cover with two slices of your favorite cheese, fold over and you've got an incredible breakfast.
