Why should you include Kale in your diet? Dark leafy greens are packed with nutrients. This time of year you can find many different type of kale as well as other nutrient dense greens grown locally.
Kale can help with lowering cholesterol and protecting against cancer.
It is loaded with micro-nutrients such as vitamin A, C and K. It also contains calcium, vitamin B6, copper, potassium, iron, manganese, and phosphorus.

Here is a raw Kale salad that I enjoy – you can vary the other vegetables you include depending on your taste and what you have on hand. It works well when the avocado is very ripe and combines with the kale like a dressing.
Kale Avocado Salad

Serves 4
Ingredients
1 bunch kale, stemmed and finely chopped (any variety)
1 cups grated carrots
1 red bell pepper, chopped into ½ inch pieces
1/2 avocado, peeled and pitted
1/4 cup thinly sliced red onion
2 tablespoons lemon or lime juice
2 tablespoons sesame seeds, toasted
1/2 teaspoon reduced sodium soy sauce (optional)
Method
Combine all ingredients together in a large bowl. Use the back of a spoon or your hands to mash the avocado into the kale. Set aside at room temperature for 30 minutes before serving to allow kale to soften.
