The Red Cabin Hosts Grand Re-Opening in South Windsor

Todd and Laura Pineo have run the restaurant since 2006 and have re-opened under new management and with additional offerings.

The Red Cabin hosted a grand re-opening and ribbon cutting on Thursday Oct. 25 at 976 Sullivan Ave.

Owners Todd and Laura Pineo, who are South Windsor residents, opened the restaurant in the summer 2006, serving breakfast and lunch.

The re-opening was prompted because the Pineos recently bought out another partner and expanded the menu.

Indeed, The Red Cabin currently offers a different take on breakfast, serving specialties including California Eggs Benedict, banana walnut pancakes and Irish omelets. The lunch menu also has a variety of specialty sandwiches, wraps, salads, homemade soups, and desserts, which are made by Laura Pineo.

The Red Cabin also now offers a new express lunch menu that is designed to be quick and on-the-go. The Pineos said that they also plan on extending their offerings and hours to include a dinner menu.

In addition, The Red Cabin also offers full catering services. The restaurant is available to rent out, or their catering services will come to you.

Mayor Tom Delnicki - one of several town councilors who were present, including Cary Prague and Cindy Beaulieu - said that businesses like The Red Cabin are the heart of South Windsor.

State Rep. Bill Aman was on hand to present a proclamation from the state legislature to the Pineos for the grand re-opening.

The Pineos, for their part, thanked everyone for their support.
