McCoy's Pub Unveils New Menu

The new items are inspired by a recent trip to Chicago.

McCoy's Pub last week unveiled a new menu inspired by a trip to Chicago in September.

The voyage cross country was to check out a stop on the Bar Rescue Tour, a reality series on Spike TV similar to the Food Network's Restaurant Impossible.

McCoy's Pub, however, was not seeking to be rescued but rather gain knowledge from some of the show's staff.

"[Bar Rescue's producer] Jon Taffer is known in the industry as an expert in bar science," said Glenn Zuklie, the owner of McCoy's Pub.

Zuklie said he went out to several restaurants with Taffer and his staff, which included Brian Duffy, a prominent Irish chef in pubs across the country.

Through talks with Taffer and Duffy, as well as a visit to a nearby US Foods plant, Zuklie started to gather ideas for new menu items. And on Friday, Oct. 19, those ideas were inserted into the new fall menu at McCoy's. (The menu is attached to this article as a PDF in the photo gallery.)

The new items inspired by the Chicago trip are: smoked mozzarella cheese and roasted tomato empanadas; baby spinach salad with house made apple cider vinaigrette, smoked bacon, red onions, and parmesan cheese; house smoked ribs; whiskey marsala chicken.

"We want [our menu] to have that 'wow' factor," Zuklie said. "It's a different experience than any other Irish pub."
