Easy Appetizer

Guests on their way? Easy Apps in Five minutes

Sorry, I should have had this up the day before Mother's Day, which I hope all you busy mom's out there had. We had a full day here and it was a cookout, nothing too foo foo (I had to keep it easy on the guys, they were making all the food). However I did manage to sneak in an appetizer of my own: Tequlia Lime Grilled Shrimp wrapped  in Cucumber with a garlic dill dip -sounds harder then it is.  OK, so to do this:

1lb of peeled deviend shrimp

2oz of Tequila Lime Cajun spice*

1 English cucumber, peeled. Keep the peeling, it makes perfect thin strips 

For dip:

8 oz sour cream 

2 tb mayo 

3 tb of Garlic Dill spice ( usually bought at a Tastefully  Simple Party)

Grill shrimp until pink, about 5  minutes. Let them cool so you can handle them. Wrap them in cucumber slices. For dip, mix all ingredients.  

* to make your own Tequila Lime Cajun Spice, Cajuns spice, lime zest, few drops of tequila -  you will have to use it right away, this you can not save. Also, you can soak your shrimp in the tequila for an outstanding flavor. Enjoy!
