Fennel and Strawberries unite

Not your usual suspects

This salad was an inspiration from a salad my friends had ordered the other day for lunch. It was fennel and baby arugula and apple, a lovely combination, I thought. However it lacked a pop, a zing, a what-the-heck-were-you-thinking! Ahh .... I thought at 4 a.m. ( that is usually when all the magic ingredients will pop into my mind until a new recipie evolves and become a reality). What about strawberries, oh, and while we are at it, anjous pears. And let's not forget a deal breaker: goat cheese. FRESH goat cheese from Beltane Farms. And then it was born and delighted the pallets of many who tried it and took the recipe card and is now making it for dinner and thier up-coming parties and events. You too can make this magic salad all you have to do is this:

1 package baby arugula

1lb strawberries sliced

1 medium size fennel bulb julienned (sticks)

3 anjous pears julienned (sticks)

4 oz of Fresh Beltane goat cheese 

handfull or so of toased almonds for a garnish 

Add pears zest & juice in a small bowl and toss 

Add arugula, strawberries, and fennel. Toss with pears. Top with goat cheese and almonds and VIOLA! 

1 lime zested & 2 lemons zested and reserve 2-3 tbs juice. This is for the pears so they do not turn brown on you and also acts as a dressing 

I will add to this as well: Beltane Farm is a wondeful place and I highly recommend visiting it. The owners do tastings on Sundays from 11 a.m. -3 p.m. When you go, bring this tasty salad, a nice bottle of white wine and relax by his lovely pond.
