In a large sauce pan add oil leaving about 2-3 inches from the top turn on med high give the oil plenty of time to come up to temp, you can test how hot it is by gently dropping a few pinches of flour , you should hear it bubble that is when we are ready! This is a standard breading proceedure (egg bath _ flour _) season scallops with salt and pepper and lemon zest dip in egg wash, coat with flour mix, re-egg, re-coat , gently drop in hot oil turning frequently for about 4 min or golden brown after pulling from the oil season with salt I used Pink Sea SaltFor the Sauce I used mayo, dill relish , and a few dashes of cayenne pepper , mix well
I served these on a Bed of Mixed field greens and a slice of lemon this was such an amazing dish , I can not wait to share this with all my GF friends out there!!! Enjoy !!
