So, this pie was an inspiration from a fellow GF blogger.
I was in the mood for blueberry pie and didn't want to spend a lot of prep time and clean up. So I went to the frozen-food isle, grabbed a bag of blueberries and a bag of mixed berries (strawberries, black berries, blueberries). This pie hangs out with a delicious coconut macroon crust and I have to say they make a terrific pair....so here is your shopping list:
1 bag frozen blueberries

2 boxes of Ms. Crimbles Coconut macaroons
You will also need unflavored gelatine
In a pot combine and heat blueberries and mixed berries over medium heat. Bring to a simmer and reduce. This should take about 30 minutes. Add lemon zest. In a small bowl mix gelatine, 2 tbs water and 2 tbs lemon juice for the crust.
This part is a no-brainer, which I love. Take those macaroons, except for one that is for you, mix them in a food processor untill it resembles bread crumbs, place this mix in a pie dish and press out to fill pie dish. I let my berry mixture cool a bit, then pour it on top of the macaroon crust and throw it in the frig. Two hours later I had pie and it was amazing! Enjoy!
