Pick me up Pink Salmon
A perfect pick-me-up after a long day. Treat yourself with this amazingly easy and delish dish.
This was a great recipe. It made me feel so much better after a long day with a sinus headache. Pink peppercorns, salmon and mint - How adorable!
So here is the recipe. I did this, I swear to God, in less then 15 minutes start to fork. This is for a single serving.
- 1 5oz filet of Salmon
- 1/2 cup tangerine juice w pulp
- 1 lemon, sliced
- A few mint sprigs 2 nice ones to place on top of salmon
- 1 tangerine, sliced, reserve 1 slice to cut in 1/2 for garnish
- Pink peppercorn and pink sea salt (these are just so great and I recommend them for every pantry)
- Balsamic vinegar
- 2 handfuls of baby arugula
In a small saute pan place sliced lemons, mint sprigs, and juice. Lay salmon on top, sprinkle fairly generous amount of pink peppercorns and just a dash of the salt. Place mint leaves on top. Cover and steam for 7 to 8 minutes. I removed the fish and placed it on top of the arugula. Reduced the juices by half in the pan, add balsamic vinegar, then pour it around the fish and over the arugula.

It was amazing! And after I was done eating it my headache and troubles melted away.
