Roasted Fennel & Beat Salad with Apples, Cashews & Goat cheese
This sassy salad is sure to charm any Beet fan

Ok I have to admit that I am not/was not a fan of the Beet, my folks loved them and fed them to me ONCE and that was it, anytime I knew that Beets were on that nights diner menu I'd call my best friend and see if I could eat at their house and I usually did.........till now with my grown "up attitude" with "grown up" taste-buds I just had to at least try them one more time, and so it was created ....Roasted Fennel With Beets & Apples topped with raw cashews and fresh goat cheese and my godess this was just a wower...I served this at work and it was a huge hit and the same comments were made " I never really liked beets..till now" so here is your shopping list and the run down for the how to:
This will serve 8
Shopping list : 2 fennel heads4 granny smith apples2 packages of love beets (plain) but balsamic would be great too2 cups crushed raw unsalted cashews2 cups goat cheese crumbles1 orange2 lemons1 bunch of arugula

Dice the fennel spread on sheet pan and drizzle with olive oil, salt & pepper & orange zestRoast at 375 for 30 min or till golden brown throw them in the freezer to cool
Dice apples and toss with lemon zest and 2-3 tbs juice

Add Diced beetsAdd cooled fennel , crushed cashews , and goat cheese serve on the arugula. Super simple super delish and sure to please any Beet Skeptic......
