The King of Kale Salad
Kale & Avocado Salad with Diced Apple that will amaze any Kale skeptic
Hey gang! So here is a salad I made at work a few months back and the customer's were absolutly amazed that this was a RAW KALE dish! Kale is considered to be a highly nutritious vegetable with powerful antioxidant properties; kale is considered to be anti-inflammatory.
Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium.
Kale, as with broccoli and other brassicas, contains sulforaphane (particularly when chopped or minced), a chemical believed to have potent anti-cancer properties.

Boiling decreases the level of the anti-cancer compounds; however, steaming,microwaving, or stir frying do not result in significant loss. Along with other brassica vegetables, kale is also a source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells. Kale is also a good source of carotenoids.
So on that note lets eat as much of this stuff as possible~

Shopping list : 1 bunch of fresh kale , 2 limes , 3 avocados,1 lg red bell pepper, 2 granny smith or a tart apple,sliced almonds, and dried cranberries
To make: remove leafy kale from stalk & chop and dice the red bell pepper and the granny smith apple , we now want to throw the kale in a large bowl, add zest of 1 lime to chopped kale, now in a small bowl we want to add two of the avocados, a good squeeze of 1/2 the lime , season to taste with salt & pepper and for good measure add zest from 2nd lime,(if you want to get spicy add a dash or two of cyenne pepper) toss this in with the kale (this is where it gets fun) use your hands to work in the avocado into the kale a spoon doesn't really cut it, now add the pepper apple , cranberries and toss, garnish with sliced almonds...ENJOY!
