After 10 Months In Vernon, Restaurant Finally Gets Chance To Expand

Staffing has become better at a popular Vernon eatery.

VERNON, CT — After opening about 10 months ago, the Vernon location of a local Mexican restaurant chain is "finally" able to expand its hours.

That was the word this week from Vernon Economic Development Director Shaun Gately after a conversation with the owners of Lucky Taco. He said the staffing situation was finally able to be beefed up.

Owners David and Erin Emmons said the first step is to add an hour to the schedule in Vernon — to Wednesday through Saturday from 11 a.m. to 8 p.m. — for dining in and takeout.

Tuesday will be added this fall with offerings like live trivia and singer/songwriter night.

Lucky Taco has its origins in Downtown Manchester. The couple opened a second restaurant — in Vernon at 81 East St. — in November 2021.

Lucky Taco's Manchester restaurant is located at 829 Main St., on the corner of Main Street and Purnell Place.
