Picture Vernon: A New Mexican Restaurant In Town

VERNON, CT — Vernon's newest restaurant — Mexico Lindo at 81 East St. — staged a grand opening ceremony Thursday.

The new location had been occupied by the former Lucky Taco. Mexico Lindo had been in Manchester from 2017 until last spring.

The owners are still waiting on some equipment to arrive, so, over the past three weeks, food has been served take-out style with the option of eating in (bring your own beverages) or taking it home. The dine-in option will eventually be available.

The menu is extensive and authentic. Traditional favorites from tacos to tamales to enchiladas to chile rellenos to burritos to fajitas are featured. Specialty dishes like Puerco En Pipian (pork chops in a pumpkin seed sauce), Mojarra Al Mojo De Ajo (whole fried tilapia with a garlic sauce) and Cecina (grilled and salted Mexican beef) also adorn the menu.

With 10:30 a.m. openings on a six-day schedule, there are even late breakfast options.
