Relocated Mexican Restaurant Opens In Vernon With Slight Twist

VERNON, CT — A Mexican restaurant that took the place of another Mexican restaurant in a busy section of Vernon has opened for business — with a slight twist.

Mexico Lindo has been open for about a week at its new location at 81 East St. in Vernon. Owner Willy Chavez had initially hoped for a July opening when he announced a relocation from Manchester on Memorial Day weekend, but settled for last Tuesday.

The new location had been occupied by the former Lucky Taco. Mexico Lindo had been in Manchester from 2017 until last spring.

Chavez is still waiting on some equipment to arrive, so, for now, food is being served take-out style with the option of eating in (bring your own beverages) or taking it home. The dine-in option will eventually be available.

The menu is extensive and authentic. Traditional favorites from tacos to tamales to enchiladas to chile rellenos to burritos to fajitas are featured.

Specialty dishes like Puerco En Pipian (pork chops in a pumpkin seed sauce), Mojarra Al Mojo De Ajo (whole fried tilapia with a garlic sauce) and Cecina (grilled and salted Mexican beef) also adorn the menu.

With 10:30 a.m. openings on a six-day schedule, there are even late breakfast options.
