New Pizza Place Opens in Wallingford

The owner has worked in the pizza business since he was 17 years old and has opened his own New Haven-style pizzeria in Wallingford.

WALLINGFORD, CT — After working in the pizza business since he was 17 years old, Wallingford resident Guido Rodriguez, 34, has opened his own pizzeria on South Colony Road.

The Meriden Record-Journal reports Nicolay’s Apizza opened at 628 South Colony Road on April 16 after Rodriguez spent several months renovating the space.

Rodriguez told the Record-Journal his New Haven-style pizza is cooked in gas-brick ovens and stressed the importance of using quality ingredients.
