BBQ Chicken & Potato Salad

With Roast Corn Relish

With so many rainy days in April, a barbeque is almost impossible. With this great stove-top barbeque chicken recipe; you can have your barbeque right in the comfort of your home.

Potato Salad

6-8 russet potatoes diced (unpeeled)

4 cups mayonnaise

1 ½ cups miracle whip

1 cup chopped scallion

¼ cup minced celery

½ cup diced pepper of your choice

1 cup chopped bacon (cooked, crispy, and not burnt)

1 hard-boiled egg chopped

3Tbls of ranch dressing powder

¼ cup Dill pickle chopped

Salt & Peppe

In a medium stock pot boil potatoes for about 7-10 minutes, or until they are soft to the touch of a fork. Strain and cool. In a medium bowl add all ingredients (excluding the chopped pickles) and stir in evenly with a wooden spoon or rubber spatula. Once everything is evenly mixed; top the salad with chopped pickles. Then cover and refrigerate for about 30 minutes.

Chicken

4-5 chicken leg quarters split

1 ½ cups diced bacon (raw)

1 ½ Onion julienned

¼ cup chopped garlic

4 cups BBQ sauce

¼ cup brown sugar

Season the chicken using your preferred seasonings. In a large sauce pan with moderate heat; add the chopped raw bacon, as it cooks it will begin to create its own fat. Once this happens, begin adding the chicken to the pan skin-side down first. Once golden brown, flip the chicken over; reduce heat and add the julienned onions and chopped garlic. Now reduce to a simmer and cover for about 5 minutes or until the onions begin to soften. Add brown sugar and stir in evenly. After this I like to pour about a ½ cup of bourbon in and let it cook out for about 4-5 minutes (or you can use water). Then add the BBQ sauce, cover and reduce to a simmer for about 10 minutes or until the chicken begins coming away from the bone. Remove from the heat and set aside; still covered.

Roast corn relish

*Preheat oven to 450 degrees**

4 cups corn

¼ cup red onion diced

1 Roasted pepper diced your choice

1Tbls Tabasco

¼ cup chopped scallion

2Tbls vegetable oil

In a small mixing bowl add all the ingredients and mix evenly. Spread mixture onto a sheet pan and place in the oven for about 7 minutes.

Construction

On a dinner plate; set down your chicken with a generous amount of BBQ (make sure you get some bacon and onions in there too!). Add a nice scoop of potato salad to the corner of the plate, now top your chicken with that sexy corn relish… owww!
