Cornmeal Crusted Baked Cod

Perfect For Lent

Ingredients

4-4oz Cod filets

1 onion julienne

½ onion diced small

3 Cloves garlic chopped

5 Cups Cornmeal

1tbls Onion powder

1tbls Garlic powder

3tbls Old bay seasoning

½tbls Salt

Pinch pepper

1 ½ cups brown rice

½ cup orzo roasted

3 cups Veg. oil

½ cup Parsley chopped

1cup milk

4 lemon slices

*preheat oven to 350 degrees*

Rice

In a small sauce pot add some veetable oil and sauté your chopped onions and chopped garlic until onions begin to soften, then add your rice and 3 ½ cups of water. Bring to a boil, then cover and lower to a simmer for about 10-12 minutes. Add your roasted orzo and cover and remove the pot from the heat.

Cod

  Take cornmeal garlic powder, onion powder, Old bay seasoning, salt and pepper and mix together evenly in a bowl. Then dip your cod in the milk and transfer to the cornmeal mixture and completely coat the fish.  Repeat until all cod is coated. With the same milk and cornmeal mix repeat the same breading procedure with your julienned onions. In a hot sauté pan add 1 ½ cups of veg oil and fry your onions until golden brown and crispy and place on a paper towel. Place the coated cod on a small sheet pan lightly coated with vegetable oil or pan spray.  Put in the oven for about 15 minutes until fish begins flakes off to the touch.

Serve with rice, your favorite seasonal vegetable and top with your fried onions and sliced lemon. This is such an easy and delicious fish option for lent this year!
