This tasty recipe for pineapple guacamole hit my inbox early this morning and speaks to this foodie loud and clear.  I love the simplicity...fresh and spicy! Â
Not sure what to do with pineapple guac?  You can scoop it on a burger, spread it on a sandwich, add a dollop to a taco, or use it for chip 'n dip. Â
Grab some extra avocado's and use them as a creative dish (like the dish pictured from Ivy's Simply Homemade).  I also like to grill the pineapple for an added layer of flavor! Â
You could also make pineapple tostadas with corn tortillas, layering refried beans, grated cheese, shredded lettuce, minced tomatoes and a big-time dollop of the good stuff below. Honestly, it’s the second best way to eat pineapple guacamole.Â
The first is with a spoon when no one’s looking ;)

Ingredients:
- 3 avocados, removed from peels and pits removedÂ
- ½c fresh pineapple, finely minced (I'm going to grill my pineapple first)
- juice of 1 limeÂ
- ÂĽc cilantro, mincedÂ
- salt and pepper, to tasteÂ
optional: 1-2 Tbsp finely minced or grated onion, ½-1 jalapeno, mincedÂ
Instructions:  In a medium bowl, mash avocados with pineapple, lime juice, cilantro, as well as any onion or jalapeno you’re using, until you’ve reached your desired consistency. (If you want a smoother consistency, feel free to puree the mixture in a blender or food processor).Â
Add salt and pepper to taste.
