Tortilla Crusted Chicken

Topped With Peppers, Tomatoes And Red Onion And Fresh Guacamole Over Brown Rice And Black Beans

Here is a different spin on chicken with some fresh ingredients. A very easy recipe that will have your family and friends buzzing for weeks.

Ingredients

5 chicken breasts

1 bag tortilla chips

3 cups seasoned flour

4 eggs

1 red onion

1 yellow peppers

2 tomatoes

Chile pepper

1 avocado

2 cups sour cream

1 tbls garlic minced

1 cup brown rice

1 can black beans

1 packet sazon

1 bag pepper jack cheese

Step 1

Make a breading station for your chicken. In a separate bowls put your seasoned flour, your eggs whipped) and your crushed tortilla chips. Now take your chicken, dredge it in the flour then dip it in the eggs and then the crushed tortilla chips. Complete this process until all chicken is breaded and then set aside.

Step 2

Preheat the oven to 350. Now take your minced Chile pepper red onion and yellow pepper toss in a bowl with a little bit of oil and seasoning and roast for about 10-15 minutes. Roast tomatoes separately for about 30 min, when they are done. Cut out the seeds and cut into strips. Now mix with your with your peppers and onions and set aside.

Step 3

In a small bowl add your avocado, minced garlic and sour cream and 2 tsps of lemon juice and mix  with a spoon until smooth and creamy (some lumps are ok). Refrigerate.

Step 4

In a small sauce pot add 2 1/2 cups of water and bring to a boil.  Add your sazon and your cup of rice and let it simmer for about 10 minutes. when the rice is just about done add your black beans, take the pot away from the heat and cover.

Step 5

Back to the chicken. In a saute pan add oil, get the pan hot and sear your chicken on both sides until golden brown. Place chicken on a cookie sheet and place in the oven for about 15 minutes. When the chicken is done, top it with your shredded cheese and melt. In a separate saute pan heat your peppers onions and tomatoes. Top your chicken with the peppers onions and tomatoes and your fresh guacamole, add your rice to the plate and your all set!
