New Ice Cream Shop To Open In West Hartford This Week
A ribbon-cutting ceremony will take place this week, with a grand opening celebration planned for this weekend.
WEST HARTFORD, CT — Frisbie’s Dairy Barn will open a new scoop shop in West Hartford on Saturday, May 9, expanding the Connecticut-based brand’s footprint with a location at 38 Isham Road in Blue Back Square.
A ribbon-cutting is scheduled for Wednesday, May 6, at noon. The grand opening on May 9 will run from 1 to 10 p.m., featuring the company’s small-batch, “super-premium” ice cream made with high-quality ingredients.
The West Hartford shop will be Frisbie’s fifth location, following a recent expansion that included a walk-up window in Sturbridge, Mass., earlier this year.

Owner Paul Parks III said the company has already seen strong local interest.
“It’s an exciting time to be part of downtown West Hartford, and we’ve already seen incredible support from the community. We’re thrilled to bring Frisbie’s to Blue Back Square,” he said.

Founded in New Britain in 2015, Frisbie’s Dairy Barn was acquired in 2019 by Paul Parks Jr. and Parks III.
The business has since expanded with partners Victoria Parks and Kendra Walker, focusing on rotating flavors, seasonal offerings, and in-store experiences.
The company also hosts events throughout the year, including a 24-hour National Ice Cream Day celebration in which shops remain open continuously.
Frisbie’s said it plans to open another Connecticut location in East Lyme later this spring and is hiring for both new shops.
