West Hartford Breadmaker Not Sour On Expansion

AVON/WEST HARTFORD, CT — One of the more popular tenants of a West Hartford food truck park is expanding to a permanent site in nearby Avon.

Kevin Masse, owner and founder of Small State Provisions, announced recently that, by fall, his organic bread bakery will have a permanent site in Avon.

He said business has been so good from his time at West Hartford-based Gastropark, he is ready to expand.

"We are expanding from our 212 -square-foot micro-bakery into a full-scale bakery," he said via email recently. "The bakery will be located at 205 Old Farms Road in Avon within the same building as Hop Meadow Brewery."

Local customers who get their fresh, organic bread in West Hartford needn't worry, however.
Maase said he's also staying at Gastropark, which is located at 637 New Park Ave. in West Hartford.

"My goal is to have the new space open in the fall of 2022," Maase said. "We will be keeping our space at GastroPark to continue to serve the West Hartford community."

Masse described his operation as an "organic bakery" that doesn't use "commercial yeast."
He went on to explain that all of his bread is made via a sourdough starter and is "cold fermented."

Masse started his business a few months prior to the pandemic, in the fall of 2019.

When COVID-19's impact became severe in March 2020, he started delivering his product, which ranged from breads to granola.

"One of my customers was building out GastroPark (he is the owner) and he suggested I come here and look to see if perhaps this would work for me," Masse said. "I opened one year ago and quickly knew we were going to outgrow this space."

In addition to Gastropark customers, Masse's company sells items to several area restaurants and eateries, including Millwrights, Present Company, Union Kitchen, Hartford Flavor and the Blue Plate Kitchen.

By expanding to Avon, Masse said he hopes to increase production and "be able to build our restaurant roster as we increase our capacity."
