Have you ever had the 2012 vintage of William Hill Estate’s North Coast Chardonnay?

Tasting Notes: Ripe tree fruit and heady notes of baked apple are supported by layers of caramel, brown spice and toasted oak flavors. This wine has a rich palate and silky mouth-feel, with moderate sweetness and a long, lingering finish.

Serves 4

Ingredients

  • 1 pound cooked, diced lobster, about 3 to 4 1-pound lobsters
  • 1 tablespoon fresh lemon juice
  • 1/2 cup thinly sliced celery
  • 4 to 6 tablespoons mayonnaise, or to moisten
  • Salt and freshly ground black pepper, to taste
  • Mixed salad greens or lettuce leaves
  • 1 avocado, peeled, quartered, and brushed with lemon juice, optional

Preparation

Toss the lobster with lemon juice and the celery. Gently stir in mayonnaise, then season with salt and pepper, to taste. Arrange the lobster salad on lettuce leaves with a wedge of avocado. Add sliced tomatoes and cucumbers for a satisfying lunch.

This lobster salad can also be used to fill toasted hot dog buns or lettuce.

Description/Tasting Notes: Red Blend with 51% Zinfandel, 23% Syrah, 14% Mourvedre, 12% Petite Sirah. Deep ruby. Aromas of cassis and woodsmoke, plus a touch of licorice. Supple, rich and broad, with smoky flavors of dark berries and cola. Complex, ripe, and focused. Finishes with gentle tannic grip and a lingering note of sweet dark fruit.

Suggested Food Pairing: Slow Cooker Beef Stew

Servings: 6

“Stew meat is cooked with potatoes, celery, and carrots in a hearty broth. Garlic, Worcestershire sauce, and paprika add flair!”

Ingredients

  • 2 pounds beef stew meat, cut into 1 inch Cubes
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1 onion, chopped
  • 1 1/2 cups beef broth
  • 3 potatoes, diced
  • 4 carrots, sliced
  • 1 stalk celery, chopped

Directions

1. Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.

2. Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.
