Grilled Fajitas Add Sizzle To Summer
This simple Mexican entree spices up outdoor cookouts, and it only takes about 30 minutes start to finish.

All of us have experienced it: that mouth-watering sensation we get as a sizzling hot plate of fajitas is carried past our table in a Mexican restaurant. We sit there and wonder why we didn’t order this great-tasting showpiece.
The restaurants make sure to bring those fajitas out with great flair because it creates interest, and I’m sure every time a plate of them goes out, the orders for fajitas increase.
You don’t have to wait until your next restaurant visit to enjoy this deliciously tender meal. This is a great item to cook out on your grill, so forget about those tired hamburgers and hot dogs and try this for your next cookout.

Easy Grilled Steak Fajitas
Serves 6
2 tablespoons extra virgin olive oil
¼ cup freshly squeezed lime juice
2 pound skirt steak, halved crosswise
2 ½ tablespoons coarsely ground black pepper
18 flour tortillas
1 cup fresh cilantro leaves

- Stir together the olive oil and lime juice in a shallow dish, add steak and marinate at room temperature for 10 minutes, turning once halfway through.
- Pat steak dry and rub with pepper. (If you're not a fan of black pepper, reduce the amount to your taste.)
- On a lightly oiled grill, cook steak to medium rare for 6 to 10 minutes, turning once. Transfer to cutting board and let rest for 5 minutes before cutting on the diagonal into very thin slices.
- While the steak is resting, toast the flour tortillas right on the grill rack, turning once until puffy and slightly browned in spots, about 1 minute.
Serve your fajitas with grilled onions, salsa, hot sauce, sour cream or whatever toppings you like.
