
You want to aim for a minimum of at least three servings of vegetables per day. Ideally, it would be five to 10 servings a day, but studies show many Americans don’t even get three servings. Start with three - then improve from there.

Here is how to get more veggies:
1) Ask yourself in your meals, “What veggies can I add to this?”
2) Eat veggies as snacks.
3) Add veggies to your sandwiches.
4) Add more veggies to your salads instead of just lettuce and use Romaine lettuce or mixed greens instead of iceberg lettuce.
5) When you want a late snack, eat veggies. I know … it’s not the most comforting thing unless you like green beans or other hot veggies. A nice bowl of warm green beans with olive oil and sea salt – Yummy! That is my favorite late night snack!
6) Have popcorn every once in a while. Popcorn gets a bad rap but it is vegetable and it does have a lot of fiber and protein. Use an air popper to cut down on the fat greatly.
When you eat vegetables, tell yourself what life it brings to you; how they are full of vitality and energy; and how eating them is the way to become and stay healthy.
Strengthen your relationship with vegetables and embrace them as a positive, powerful addition to your meals that fights off diseases and slows aging.
