There's no reason why we can't have Chicken Parmesan like everyone else! YUM! So, here's my version of a healthier version:

I gathered some tomatoes from our garden and others from the farmer's market we attended this last weekend.
After slicing the tomatoes and onions I hand picked Basil & Oregano from our herb planter. (We bought several small herb plants and placed them together in a couple of nice hanging baskets:)
Spray olive oil (I keep a spray bottle full of olive oil with about an inch of water at the bottom, near my stove at all times) on chicken, slice herbs and fry.
Using lasagne pan, pour homemade tomato sauce (or your favorite low carb tomato sauce) on the bottom of the pan, then chicken, followed by more herbs, tomatoes and onions. Bake at 350 with foil, for about 25 minutes. Remove foil and turn off oven. Sprinkle parm cheese and mozz cheese. Put back in oven (off) for about 10 minutes. Wah lah! Dinner's ready!
Basic Tomato Sauce Recipe
1/4 cup olive oil
1 medium onion finely chopped
1/2 medium celery rib, finely chopped
2 garlic cloves, chopped
1 teaspoon basil or 1 fresh leaf
1 28 oz can of crushed tomatoes
salt & pepper to taste.
