I first met Chef Lam at their Main Street Location and immediately fell in love with his subtle style. Bold and pointed when you order the Thai and Laosian dishes, calm and delicate when you wish for subtle seasoning, this chef expresses an orchestra of Asian culture and artistry in each dish. Their award winning Lum-lings (named for the family) are a dream of soft luscious goodness. A simple pillow of flavor raising the music with his dipping sauce-fried shallot, garlic, the simple secrets of a true master Asian chef.

Patch: If you weren’t a chef what would you like to do?

Chef Lam: Home repair and renovation because I've done it in the past and I can see the end result of the days hard work.
Patch: Does your cuisine reflect any of the chefs that you worked for previously?
Chef Lam: Yes, somewhat. My first chef was chef Peng. He had a different way of doing things that I feel is a contribution to my uniqe style of cooking.
Patch: What is your favorite American dish?
Chef Lam: It has to be of course steak, I love a nice big piece of juicy steak.
Patch: What is your favorite dish on the menu and why?
Chef Lam: Short ribs, because of the distinct flavor that I feel is not an everyday taste.
Path: What is the most challenging part of each day?
Chef Lam: When I have the whole restaurant filled within a short time, it makes it hard for me to get the orders out all at once because I'm the only chef with only one helper.
