Fleming’s Prime Steakhouse & Wine Bar is pleased to announce the appointment of Jorge Diaz as Operating Partner of Fleming’s in Tampa.
Diaz first joined the company in 2004 as a Manager at the Tampa restaurant and later that year was promoted to Operating Partner for the restaurant opening in Coral Gables. His career in the restaurant industry includes several other restaurant achievements in the Tampa area, all following a successful NFL career with the Dallas Cowboys and Tampa Bay Buccaneers.
“I am excited to begin my new role as the Operating Partner at Fleming’s,” says Diaz. “I look forward to bringing a memorable culinary experience to the Tampa dining scene.”

Jorge and his wife, Katherine, along with their two sons, Antonio and Jorge Jr., live in the Pinellas County area. During his free time, Jorge enjoys spending time with his family, coaching his son’s baseball team, and providing “game day” analysis on the Bucs for local FOX affiliate Channel 13. Jorge is also active in his community by supporting and developing local initiatives dealing with autistic children and their families.
