Spanish Restaurant Opens In Tampa's North Hyde Park Restaurant

TAMPA, FL — A new Spanish restaurant from a Michelin-recognized hospitality group opened Wednesday in Tampa's North Hyde Park neighborhood.

Lumbre, a new eatery from executive chef and co-founder Nick Orr, opened in the Rome Collective, Tastes Pretty Good Hospitality Group said in a news release.

The menu focuses on Spanish cooking built around wood-fired grilling, traditional paella, tapas, seafood, imported cheeses and hams. The restaurant also features a bar serving Spanish wines, cider and sangria.

The dinner menu is organized into four sections: cheese and charcuterie, bocados, entrantes and platos principales. Menu highlights include Cantabrian anchovies, Pata negra, Spanish-style chorizo, Manchego, Valdeon, pan con tomate on house-baked pan de cristal, jamón Ibérico croquettes, tortilla de patatas and paella prepared to order, the news release said.

Lumbre joins a growing portfolio from Tastes Pretty Good Hospitality that includes Michelin-starred Rocca, Michelin-recognized Bar Terroir and Michelin Bib Gourmand recipient Streetlight Taco.

Orr is stepping into his first ownership role after nearly a decade with the group, where he helped open and run the kitchen at Rocca, the company said.

“Nick Orr was my first hire and he’s been core to Rocca’s success ever since,” Bryce Bonsack, culinary director at Tastes Pretty Good, said. “He’s earned this opportunity through years of consistency, leadership, and craft. Lumbre is his moment to step forward and continue our team's work to shape Tampa’s reputation as one of Florida’s most compelling dining destinations.”

Orr's interest in Spanish cooking began years ago while working alongside a family friend from Zaragoza. In 2024, he cooked in Spain and trained on traditional grills in Getaria while also working in kitchens in Madrid, San Sebastian, Barcelona and Valencia.

“Lumbre is built from the meals and people that taught me the Spanish cuisine,” Orr said. “It’s about honoring tradition, cooking with intention and creating something that feels genuine. Our team will be making pan de cristal every day at Lumbre, a crucial part of an essential Catalonian bocado (small bite): pan con tomate and one of my favorites.”
