Hong Kong Harbor on Cheshire Bridge Road in Midtown scored a 41, or U, on its April 13 inspection.

  • Observed failure to properly store raw animal meats and RTE foods according to final cook temperatures in RIC, WIC and prep-top cooler.
  • Observed failure to store food covered throughout facility: prep-top counter, WIC, RIC.
  • Observed failure to keep sanitation buckets in facility at proper concentration -Cl must be kept at 50-100 ppm in solution.
  • Observed dishes being stored "clean" and ready to use with food debris buildup on food contact side.
  • Observed rodent droppings in: drawers with utensils, on prep top counters, on top of food contact surface side of plates COS: plates/utensils removed to be washed.
  • Observed spider crawling on meat slicer during inspection.
  • Observed failure to properly date mark items being held for storage all throughout kitchen.
  • Observed date marking sticker (9/18) in walk-in-cooler unit on raw fish COS: discarded.
  • Observed failure to provide HACCP plan for jellyfish being stored in salt at room temperature and live lobsters in holding tank for service.
  • Observed failure to properly label items once removed from original container with common name through-out kitchen (WIC, RIC, dry storage).
  • Observed dry storage (rice) bin and large pot being stored on floor -must be stored 6" off floor.
  • Observed wanton chips stored in cardboard box (beer box).
  • Observed failure to employee to wear hair restraint while prepping shrimp.
  • Observed failure to store wet wiping cloths in sanitation buckets while not in use (multiple cloths stored on prep top table, counters, floor).
  • Observed in-use utensils being stored in still 77F water.
  • Observed multiple bins storing food with large cracks and breaks.
  • Observed multiple bins storing food that are not NSF approved.
  • Observed raw wood crate being utilized to store lids in dry storage area -must be properly sealed.
  • Observed handle/door portion of RIC door with heavy food debris buildup.
  • Observed very heavy grease/food debris buildup on floors surrounding cooking equipment.
  • Observed inside of WIF floors with food debris buildup.
  • Observed hood vent with heavy grease accumulation buildup.
  • Observed outdoor equipment being stored in kitchen and not in designated area.
  • Observed rodent droppings all throughout facility.
  • Observed back door with large holes in frame that could allow entry of rodents/pests; must properly seal hole in wall at service area.
  • The restaurant must schedule an intervention hearing with the county Health Department. A follow-up inspection will be held April 24.

  • Observed failure to provide light shields for lights in the main kitchen.
  • Observed failure to provide light bulbs in reach-in coolers in the main kitchen.
  • Observed flying insect activity and rat-like pellets/droppings upstairs and in the main kitchen.
  • Observed failure to seal and secure outer openings.
  • A follow-up inspection will be held April 27.

  • Observed no sanitizer buckets set up during the time of the inspection. COS. Sanitizer buckets were set up and tested by front food service and back prep area. Quat reading 400ppm. Advised PIC to have buckets set up during hours of operation.
  • Observed food debris and rust overhead deli meat in display cooler. Provide smooth, durable, easily cleanable surfaces.
  • Observed failure to store wet wiping cloth in sanitizer solution in between use. Stored throughout kitchen on prep counters.
  • Observed failure to post last inspection within plain view of customers( stored behind printer in the front service area).
  • Observed failure to protect single service cup lids from contamination. Lids found stored in an upright position at the self service drink station.
  • Observed bagged potato chips being stored in the vegetable prep sink. Vegetable prep sink must be used for its designated purpose only.
  • Observed reach in cooler by grill in disrepair (standing/pooled water at bottom of reach in cooler). All equipment must be in good repair. Advised PIC to discontinue use until equipment is fixed.
  • Clean surfaces throughout kitchen area and reach in coolers as needed/ frequently and routinely.
  • Observed light out underneath of ventilation hood. Replace light bulb to allow adequate lighting over the grill area.
  • Observed employee cell phone on prep top counter. Personal/ employee items must be in a designated area up and away from food prep area/food items.
  • A follow-up inspection will be held April 24.
