• Observed potentially hazardous food (chopped chicken in marinade) cold held at greater than 41 degrees Fahrenheit for more than a 24 hour period. CA: Discussed with PIC and food was discarded.
• Observed combined ready-to-eat potentially hazardous food (reach in: corn, and other veggies and in walk in: Cabbage and shredded veggies) held more than 24 hours without date marked according to earliest date of opening/preparation. CA: Food was discarded.
• Observed sanitizing solution exceeding the maximum concentration allowed. CA: Sanitizer solution was remade.
• Ambient air thermometer in holding unit not accurate within +/- 3 degrees Fahrenheit (1-20 degrees off). Thermometer was removed and will check for new thermometer during followup inspection.
• Observed food (cooking oil and brown sauce) stored on floor. Food was moved to a higher elevation.
• Follow up will be done with in the next 10 days. Discussed with PIC about correcting all issues encountered, by follow-up inspection.
