• Microwave observed with melted/damaged top inside. Discussed with manager about discarding damaged equipment and replacing.
• Observed food being cooled by non-approved method. Person in charge failed to insure proper cooling. Discussed with manager the use of ice during cooling process and keeping cooling logs.
• “New” microwave not in original working condition and not commercial make. Told manager microwave must be replaced immediately with commercial grade microwave.
• Observed grease and other accumulation on walls and ceiling. Discussed with manager about having routine cleaning.

• No copy of latest inspection report. Food service license not properly displayed.
• Observed single-service articles handled, displayed, or dispensed in a manner that allows for contamination. Coffee straws not individually wrapped.
• Remarks: Manager will have someone registered for a food safety course by 2/18/2016 and Environmental Health office will be notified of registration. Discussed importance of fully stocked hand washing facilities, separating chemicals from food storage and dating food. Suggested a time/temperature log for cold holding and hot holding.

• Observed cooked chili at 46 degrees in walk-in-cooler. Chili was cooked day before and placed in walk-in that night covered by plastic wrap. Corrective Action: PIC was notified chili did not cool within the 6 hour period, discarded chili. Corrected On-Site.
• Observed containers of pimento cheese in reach-in-cooler opened on 12/28/2015. Inspection was on 2/4/2016. Corrective Action: PIC was notified of issue, containers of food were discarded.
