• Observed raw chicken wings stored over cooked wings. PIC was notified and then moved wings. Corrected On-Site.
• Observed soiled knives with encrusted with flour and food particles, hanging on magnetic knife holder with clean knives. PIC was notified and the knives where taken to the 3 compartment sink to be washed and sanitized.
• Observed dishes being stacked wet. PIC was notified and then begin to stack dishes to allow air to circulate through them.
• Observed roach activity as evidenced by live roaches found in the dining room area which is in close proximity to the kitchen. PIC was notified and voiced that there would be a pest control professional coming to treat the facility.
• Remarks: PIC voiced that a licensed pest control company would come with in the next week to treat the facility for roaches. A follow up will be done to validate this claim.
