  • Dish machine chlorine sanitizer not applying at all. Corrective action: Had employees set up sanitizer area in 3-comp sink. Will check when corrected.
  • Observed microwave, tea nozzles, ladle, and slicer with old food accumulation. CA: Discussed with manager proper cleaning methods
  • No consistent date marking procedure.
  • Observed food container not properly labeled (bottles in night-shift cook area). Discussed with manager about labeling all containers holding food.
  • Observed pans being stacked wet. CA: Discussed with employees proper drying methods.
  • To-go containers stored up-right without protection. CA: Discussed with employees proper storage.

  • Observed containers being stacked wet, not allowing for drying. CA: Discussed with manager stacking methods to allow air-drying.
