• Observed Shelled Eggs on prep table at 93 degrees Fahrenheit. Discarded all. Discussed using Time as Control for the shelled eggs.
• Observed knife next to the prep table, but actually stored on the back of the hand sink. Knife was removed and sent to be properly washed. Discussed knife storage location with PIC.

• Observed personal drinks stored on and above prep tables. Drinks were discarded during the inspection. Discussed proper location for personal drinks with the CFSM.
• Observed food prep tables that had excessive waste food debris on them and were not being used and were in need of cleaning and sanitizing. Discussed with CFSM. Areas were cleaned during the inspection.
• Mocha/frappe pitcher is dirty with dried on foods in the bottom and would not come clean in the normal rinse that should occur after each use. Pitcher was taken to the three compartment sink to be properly washed, rinsed and sanitized.
• Observed chemical bottles stored in sink and above the sanitizing basin on the three compartment sink. Chemicals were relocated after discussing proper storage with the CFSM.
• Observed sanitizing cloths stored on prep tables when not in use. Discussed with CFSM about the need to store sanitizing cloths in the sanitizer when not in use rather than on the prep tables.
• Observed waste food debris in the bottom of the coolers, pull out drawers, dry storage areas, exterior of sugar containers stored under the coffee makers. Discussed with CFSM. Areas needing cleaning were to be cleaned during the inspection.
