• Observed dirt and scum build up in waste receptacle module of warewasher machine. Notified management and agreed that employee/s would to clean it. Corrected On-Site.
• Potentially hazardous food, sausage gravy, not held at 135 degrees Fahrenheit or above. When brought to the general managers attention. it was discarded immediately.
