• Observed an open beverage container on a food preparation table or over/next to clean equipment/utensils. Corrected On-Site.
• Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit because of cooler not holding proper temperature. Pic ordered that objects be thrown out immediately after the issue was made known. Also PIC was notified that cooler be fixed. Corrected On-Site.
• Observed food being cooled by non-approved method. Person in charge failed to insure proper cooling. Discussed with PIC an begin cooling using the ice bath method. Corrected On-Site.
• Observed concentration of chlorine solution in ware washer to be below the acceptable level. This was brought to the PIC’s attention and she said that the servicer of the machine would be notified.

• Observed the drying towels at a main hand sink not accessible. Supposedly fixed during the inspection but upon recheck they were still not accessible. Corrected On-Site.
• Observed boiled eggs cold stored but holding at 48F and 53F. Observed chicken salad cold stored but holding at 47F.
• Observed two containers of white powder cleaning chemicals that were not labeled as to the contents. Containers of all chemicals must be labeled as their contents.
• Observed a flat iron used on the grill that was equipped with a pair of vice grip pliers as a handle. The flat iron needs to be replaced with one that is not broken and not use the vice grips.
• Observed the exterior of the bulk sauce containers and shelving around the bulk sauces that had waste/splashed on foods on them and needed to be cleaned and sanitized.
