TJ's Country Buffet in Adairsville, McDonald's and Whistle Stop Express, both of which are in Cartersville, all received failing grades.

- Observed person(s) in charge to not effectively managing conditions in establishment to ensure compliance with the Food Service Regulation. Corrective action: discussed procedures with managers that need to be corrected.
- Observed several employee drinks in food coolers/prep areas and in non-approved containers. Corrective action: drinks discarded.
- Observed employee food in food prep cooler. Corrective action: keep employee food separate.
- Observed very greasy pans used for cooking. Corrective action: discard pans or deep cleaning to clean contact surface.
- Observed build up on ice machine. Corrective action: regular cleaning of the ice machine.
- Observed cold-hold unit not maintaining proper temp. Yogurt was at 44 degrees F. Corrective action: food items discarded.
- Observed old stickers with out of date on food. Correct dates of preparation and disposal not marked on containers. Corrective action: correct date marking procedures.
- Observed sanitation rags not in correct storage or in use. Corrective action: discussed with manager about wet sanitation rags must be in use or in correct storage.
- Observed ice scoop stored on top of dirty surface. Corrective action: discussed with manager on getting a scoop holder; keeping surfaces clean;
- Observed scoop stored inside strawberry container
- Observed food and debris on reach in gaskets. Corrective action: regular cleaning needed
- Observed cellphone on food prep line. Corrective action: keep personal items in a designated area away from food service and preparation.
- Observed several live flies throughout. Corrective action: keep back door closed as much as possible.

- Certified Food Safety Manager does not demonstrate proficiency in active managerial control measures. Corrective action: persons in charge, managers or CFSM must be properly trained or retrained.
- Observed a personal drink without a lid stored on an active food prep table. Drink was discarded.
- Observed three hand sinks that were filled with other items and were not readily accessible.
- Observed raw ground beef stored above apples in the walk in cooler.
Instructed employees to physically seperate raw meat products and fresh/cooked foods. - Observed dishes in the sanitizing compartment of the three compartment sink that did not have any sanitizer solution in it.
- Observed dirty dishes stored on the clean side of the dish machine drain board.
- Observed cooked meats in the walk in cooler without proper date marking. Discussed with the person in charge the seven day discard requirement. Corrected onsite
- Observed spray bottles of cleaning chemicals without proper identification.
- Soft drinks bag in a box are out of date, Diet Coke expired March 5, 2015.
- Observed potentially hazardous food thawed in an improper manner. (Catfish fillets in standing water in a five gallon bucket in the floor). Thaw foods by using a microwave, thaw during cooking, thaw under cool running water or by leaving in the cooler until thawed.
- Observed tables and shelving that have grease and food debris built up and are in need of cleaning and sanitizing. Areas were pointed out during the inspection with the person in charge.
- Observed mold growth on walls behind the three compartment sink. Walls and caulking behind the three compartment sink have mold growing on them and need to be cleaned and/or replaced.
- Walls and floors around prep tables, cooking equipment, trash cans, dish machine, sinks etc have waste/splashed on foods on them and need to be cleaned.
- Observed many items stored outside that are not being used. Get rid of any unnecessary items that are being stored on the premises.
- Observed back door open without a protective screen door or an air curtain.
A follow-up inspection will be conducted on Wednesday, April 15.

- Observed employee drink not in single service container with lid and straw above cooling food. Corrective action: Corrected on site by placing drinks in correct single service lid/straw.
- Observed employee tobacco products stored next to and over cooling food. Corrective action: keep employee personal belongings in separate area away from food.
- Observed the wrong sink being used for hand washing. Corrective action: discussed with person in charge to label hand washing only with signage and a splash guard.
- Observed raw eggs stored over ground beef and beside ready to eat foods and vegetables. Corrective action: move eggs to the lowest shelf for proper separation. Physically separate any ready-to-eat food and veggies from any raw food.
- Observed food in prep cooler and walk in cooler without proper coverage. Corrective action: when food is stored it needs to be covered for protection.
- Observed food not being held at 41 degrees Fahrenheit or below. See temperatures listed below. Corrective action: discard food.
- Observed potential hazardous foods not being held at 135 degree Fahrenheit or above. See temperatures listed below. Corrective action: raise temperatures to 135 degrees or above.
- Observed raw eggs at room temperature without a time or temperature control. Corrective action: discussed with the person in charge about time/temp control.
- Observed no consistent date marking. Corrective action: date mark with a 7 day discard with day 1 being the day of preparation.
- Observed country fried steak being cooled directly under air vent with no protection from contamination. Corrective action: cool food away from air vent; discussed examples of cooling process with person in charge.
- Observed dishes not inverted or covered to protect from contamination. Corrective action: invert dishes or cover the top one.
- Observed single use plastic buckets being used multiple times to store cold and hot foods. Corrective action: discard buckets and replace with acceptable storage plastic or stainless steel.
A follow-up inspection will be held on Friday, April 17.
