  • Observed improper employee drink container and storage in kitchen, on prep line, within back food storage area. Discussed with person in charge about separation of employee drinks from food and kitchen areas. Single service container with lid and straw.
  • Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. See temperatures; corrected on site by person in charge (discarded).
  • Observed ready to eat food not date marked for 7 days discard. CA: Date mark with a 7 day discard with day 1 being the day of preparation.
  • Observed food found past disposal date marked. corrected on site; food discarded from discard date of 06/05/15.
  • Observed live flies in kitchen. Discussed with PIC about pest control.

Discussed with PIC to have employee drinks with single service disposable cups with lid and straw with designated location.
  • Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Food moved to time control with four hour limit by PIC. See temperature list.
