- Observed dirty pans and dishes stored as clean with dried food debris, observed rusted top portion in the ice machine, Observed dirty ice chute on soda machine with mildew build-up. Discussed cleaning with PIC. Observed very greasy build up on pans used for cooking.
- Observed soups and sauces on hotwell line not cooked to proper temperature for hot holding. Instructed PIC to remove items and cook to proper temperature before serving. Also discussed taking temperatures of foods and keeping a temperature logs of foods.
- Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Both reach in coolers and the walk in cooler air temperatures above 44 degrees Fahrenheit
- Observed establishment utilizing time as a public health control without having written procedures and not within a 4 hour time limit.
- Observed soup bags thawing in standing water in hot well
- Observed missing thermometer in two prep coolers; walk in cooler outside and inside thermometers broken and not reading accurately.
- Observed multiple employees prepping food bare handed with painted acrylic nails.
- Observed wet stacking dishes observed equipment and utensils being wet stacked and not properly air dried.
- Observed spoons laying in pasta salad food storage with handle completely submerged.
- A follow-up inspection is scheduled for Aug. 5.

- As noted on previous inspection, Observed single-use gloves not changed as needed after changing tasks or when damaged or soiled. Employee was putting raw shellfish on the grill then with the same gloves, began plating RTE corn on the cobb and sweet potatoes. Contaminated food was discarded.

- As noted previously, several dishes had waste foods stuck on them and stored above the grill. These dishes were rewashed.
- Observed milk stored in the reach in cooler that was being held at 56F. Creamer was also stored in the same cooler and was 57F. All were discarded and the cooler placed out of service until it can be repaired.
- Observed individual creamer packages that were stored in standing water. Creamers were discarded.
- Observed sanitizing solution that had 0ppm available chlorine. Sanitizer solution was remade fresh.
- As noted in previous inspection, observed standing liquid in cooler with waste food debris mixed in. Needs to be cleaned out and the cooler sanitized.
