• Soap was missing from the hand sink in the front prep area. The soap should be replaced immediately.
• As noted on the previous inspection, Cooler in the front cook area is holding foods above the maximum cold holding temperature of 41F.
• Observed chicken soup on the gas stove at 105F being “Hot Held” until ordered and then reheated. The soup was discarded and will be held at 135F from this time on.
• Test strips measuring the chlorine sanitizer in the automatic dish washer were not available. Test strips should be used at least two to three times a day to verify the correct concentration of chlorine is sanitizing the dishes.

• Observed employees changing gloves without washing hands; wiping gloves on apron/clothing.
• As noted previously, several dishes had waste foods stuck on them and stored above the grill an over the chili steam table. These dishes were rewashed.
• As noted on the previous action, observed wiping cloths wet/damp stored on prep table, and in hand sink rather than in sanitizer.
• As noted in previous inspection, observed standing liquid in cooler.
• Observed food debris in reach in cooler.
• Observed dumpster top open and overflowing.
• As noted previously, the floors under and around the three compartment sink and in need of cleaning.
