Know Before You Go: "Numerous" Live Flies In Kitchen

The Bartow County Environmental Health Department visited the following establishments to conduct food service scores June 24-July 1:

• Observed cooler not working properly. Tomatoes holding at 45 degrees, being held on ice, ice not being maintained properly to hold proper temperatures. CA: Went over proper holding with PIC and told PIC to get cooler serviced. Corrected On-Site.
• Observed walk-in cooler thermometer not calibrated accurately. Thermometer reading higher then what the cooler temperature is. New Violation.

• Observed build up on ice machine. CA: Regular cleaning of the ice machine.
• As noted on previous inspection, observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. COS by PIC, Food switched to time control until unit is repaired. See temperatures.
• Observed establishment utilizing time as a public health control without having written procedures and not within a 4 hour time limit. CA: Discussed with PIC the difference in temperature and time control. Discussed the correct steps to correct procedures on time control.
• Observed ready to eat food not date marked for 7 days discard. CA: Date mark with a 7 day discard with day 1 being the day of preparation.
  
• Observed numerous live flies in kitchen. CA: Discussed with PIC about Pest control.
