- Observed raw foods stored above fresh/cooked foods stored in the walk-in cooler.
- Observed foods not covered throughout the kitchen as well as in the walk in.
- Observed scoop for rice with food debris on it stored in water at 125F.
- Observed chicken and beef close to the prep unit but not sitting inside. Holding at 56F and 58F.
- Observed chicken, beef, shrimp and pork in the walk in cooler holding at 43F, 44F, 43F, 44F.
- Observed chicken on the warmer rack holding at 78F.
- Observed potentially hazardous foods stored in the walk in cooler that were not properly labeled with a seven day discard.
- Observed raw fish sitting directly in the sink without running water and being left to thaw.
- Thermometers were not found in the walk in cooler.
- Observed raw chicken being prepped in the three compartment sink that was visibly dirty and needed to be cleaned and sanitized.
